Chess Pie by Minnie Pearl
You may be asking, what exactly is chess pie? We are here to tell you that it is a delicious, southern combination of sugar, butter….and more sugar and more butter.
1/2 cup butter or margarine
1 1/2 cups sugar
3 eggs, beaten
1 tbsp cider vinegar (we used apple cider vinegar)
1 tbsp vanilla
1/4 tsp salt
1 (8-inch) pie shell, unbaked (we used 9-inch)
First, preheat your oven to 300 degrees.
Next, combine butter and sugar in a saucepan. Cook over medium heat, stirring constantly until very smooth.
Remove from heat and add eggs, mixing thoroughly.
Stir in vinegar, vanilla, and salt. Beat to blend ingredients.
Pour into pie shell and bake 50 minutes.
